Who decided that certain old scribblings would be considered part of the Bible and other old scribblings would be consiered "tradition"? Bad literary agent or something?

You know religion never claimed to be a scientific theory. It has always said that it's precepts were a matter of belief and not empirically provable. These potshots are very easy to make.

There is not a universal agreement about what is in the bible. Catholics accept the apocrypha while Protestants do not.

I also wonder why some things are stubbornly held on to as tradition, while other things change or are let go.

Does that mean it is immune from scientific analysis?
Cooking is considered an art, not a science, but we spend a great deal of time and effort judging it by standards that we feel are perfectly acceptable to us. Finding gold by training dogs to search for plants often found near gold mines is not claimed to be scientific theory but is instead fully grounded in anectdotes, but that does not render it immune to analysis.
