Right! I forgot. I am OK with lime, chili powder and cheese but I don't trust mayonnaise that has been on the street all day. The USA classifies it's ethnically diverse state by the percentage of people who are other than White, Non Latino. Hawaii is the most ethnic state. According to the National Commission for the Development of the Indigenous Peoples (CDI), there were 25,694,928 indigenous people reported in Mexico in 2015. By percentage of people CDI classifies as indigenous, Oaxaca and the Yucatan as having the largest percentage of indigenous people in Mexico.
The Yucatan is probably the easiest place to reach from the USA, as you can usually take a ferry from Tampa or drive from Cancun airport. Oaxaca you can get to from Mexico City, Houston or Tijuana. It's much easier than traveling to Peru, Brazil, or Bolivia or Bhutan. |

The couple of times I visited Mexico in the 70's, when I lived in Calif, you did not eat the food drink the water. We drank beer and ate bagged snack food. A buddy was a little drunk and got a street burrito. He didn't even make it back to the hotel. On the street we were on they had these trees planted in big ceramic planters. He used a couple of them as a toilet and didn't come out of the hotel bathroom for hours. I liked Mexico, the parts that I saw, about as much as I liked Texas. That is, not at all. But I never went more than 20 miles from the border, so what do I know. Too many kids bugging you for money because you're a Gringo. Drove me nuts. And if you make the mistake of giving them some change, it got 10 times worse. If you take a risk, you may lose. If you never take a risk, you will always lose. |

It's like this: in most households, eggs are kept in the pantry, or some other cool, dry place. Oil is kept in the pantry. Mayo is egg yolk and oil. ergo mayo can be kept in the pantry. Now, all mayo jars do say "refrigerate after opening." I do refrigerate mine, but lots of people don't. As far as street stands are concerned, chances are they open a big 2-3 kilo jar in the morning and use it up by the time they close for the day. Industrial mayo, BTW, is made with pasteurized egg yolks, not straight-out-of-the-egg ones. Alternatively, you can steal packets of mayo from a 7-11 and put that on your corn. Liked Cancun when I was younger, real party atmosphere. I heard rumors a couple of our managers got themselves arrested. Doubt I would like it as much now. Cozumel was a decent shore excursion, though saying you were there made it hard to give blood for years after. TJ went to say I went. Awful place it was. And I was out by the early afternoon. Not much plans to go back. I still wonder why vanilla extract is so cheap there. The President is a fink. |

Just pay the bribes and head for the border nonstop. cheap drugs, cheap booze, cheap spices.... all because they are mislabeled. Good packaging though. One tourist avoided the water (he thought) but forgot that the ice in the drinks is made with local water. That's all it took. The Border region is the worst of both countries. I would not trust a street vendor's food in most places. Give me a brick and mortar food vendor with or without check out lines. |

My source was good but not completely juiced in for info. My guess was it was catch-and-release spent some time in the drunk tank.
Seems fairly real, and the vanilla extract is effing everywhere. Why just that spice or that one more than others.
I was warned about that, might have gotten slightly caught. I was fine there but for a week when I got back anything I ate ran in and out. Was ready to just eat in the bathroom and save the walk. The President is a fink. |

Hungarian paprika is ultra expensive compared to Mexican paprika, but if its sold in a border town its going to bear a Hungarian label. Official label, adulterated content. Same as hyascinth ... in Mexico its going to be derived from an African plant. In Egypt its derived from a Mid Eastern plant and is higher quality. However no Mexican vendor will tell you that. |
