As to beef, I've seen, literally, tons of raw beef. Most of it is red, reddish-brown, or brown-gray. No idea why.

Pork tends to be the same range of color, to the point they're hard to tell apart visually (pork overall tends more toward pink than red, but it's not immediately obvious). It varies more when cooked.
