I'm making a Xmas meatloaf with red
wine. The trick is, put all the ingredients
in the bowl, but not the beef. Bread
crumbs, spices, bread cubes, 2 eggs,
carmelized onions. Keep adding red
wine until its a wet thick mixture. Now
work in the beef and form a loaf. Doing
it this way will ensure the ingredients
are evenly spread throughout the loaf.

How long can you let the ground hamburger meat sit there defrosting without it going bad before it gets soft enugh to mold into anything.

Defrost it overnight in the fridge.
If you have a good micro with a
defrost setting, that will work.
I prefer overnight.

Sorry,,, too broke to live like that. Which is why I try to make meatloaf and retain the grease that would otherwise be wasted. If I spend money for it, I have to eat all of it. So when I buy an avacado, I have to eat the pit; when I buy onions, its best that I bake them so as not to have to peel away and discard the outter layers.

It has nothing to do with this 'eat the whole animal' movement so often embraced by Vegans and Anarchists, its simply a matter of poverty.

I'm thinking of doing something with beef patties, bacon, and a sauce made of yogurt, cottage cheese and peanuts (with garlic and perhaps herbs).

Option one is to wrap the beef in bacon and bake it, then just pour the sauce over it. Option two is to cook the patties and bacon separately and then add the sauce and pop it in the oven.

I'm leaning towards option one, because bacon is best baked in an oven.
